- 1/2 cup dried tapioca pearls (boba)
- 2 black tea bags (or 1 tbsp loose leaf black tea)
- 1 cup hot water
- 1/2 cup milk (dairy or non-dairy)

- 1/2 cup granulated sugar
- 1/2 cup water

Instructions:
- Make Simple Syrup: In a small saucepan, combine sugar and water. Heat over medium heat, stirring until sugar dissolves. Let cool completely. This can be made ahead and stored in the fridge.
- Cook Tapioca Pearls: Bring a pot of water to a rolling boil (about 4 cups of water per 1/2 cup of pearls). Add tapioca pearls and stir gently to prevent sticking. Once they float, reduce heat to medium and cook for 5-7 minutes (or according to package directions) until soft and chewy. Drain and rinse with cold water. Transfer pearls to a bowl and mix with 2-3 tablespoons of the simple syrup to prevent sticking and add sweetness.
- Brew Tea: Place tea bags (or loose leaf tea in an infuser) in a heatproof mug or pitcher. Pour 1 cup of hot water over the tea and steep for 3-5 minutes, or to your desired strength. Remove tea bags/infuser and let the tea cool completely.
- Assemble Boba Tea: In two tall glasses, divide the cooked tapioca pearls. Fill the glasses with ice. Pour the cooled brewed tea over the ice, then add milk to each glass. Add simple syrup to taste (start with 1-2 tablespoons per glass and adjust).
- Serve: Stir well and serve immediately with a wide boba straw.
