- 2 lbs lamb shoulder, cut into 1-inch cubes
- 1 large onion, chopped

- 1/4 cup chopped fresh cilantro
- 2 tbsp olive oil

- Salt and pepper to taste

Instructions:
- In a large skillet, heat the olive oil over medium-high heat. Brown the lamb on all sides. Remove the lamb and set aside.
- Add the onion to the skillet and cook until softened.
- Add the garlic, cumin, coriander, ginger, turmeric, and cayenne pepper. Cook for 1 minute more until fragrant.
- Stir in the diced tomatoes, chicken broth, and dried apricots. Bring to a simmer.
- Return the lamb to the skillet. Transfer the mixture to a slow cooker.
- Cook on low for 6-8 hours, or on high for 3-4 hours, or until the lamb is tender.
- Stir in the fresh cilantro before serving. Serve with couscous or rice.
